Let us start by understanding a Canoe and a Kayak

A canoe is a lightweight narrow boat pointed at both ends and open on top, propelled by one or more seated or kneeling paddlers facing the direction of travel using a single-bladed paddle.

A Kayak is define as

A  boat in which a person sits down with his or her legs in front and uses a double-bladed paddle to propel the boat through the water. Kayaks are typically "closed boats" in that a person's legs are inside and underneath a "spraydeck."

Kayaks are always paddled with a double-bladed paddle,

Some Advise

There are a lot of properties to look for in an inflatable kayaks. Lightweight is good but too light you will be blown around on a windy day. Get a long kayak too for better tracking. Lastly, if you are getting an AE, do consider adding the optional drop stitch high pressure floorboard. This will prevent the kayak from sagging in the middle, lifting the bow and stern up and affects your tracking again. The heavier you are, the more problem you will face.

Hobie and Airis have high pressure floorboards that are stiff and holds the shape of the hull. The material is thicker but heavier too.
Avoid inflatable that are "Indian Canoe" shape. The big or tall side chambers catches wind easily and you will cry on a windy day. Look for low profile design.

Material: Thick PVC, rubber like material are tougher and less prone to leakage. It dries easier too. That makes a difference between pool toys and kayaks. PVC material of pool toys ... I meant real pool toys are thin and will leak anytime. They are cheaper to manufacture. You can kinda compare an inflatable life ring you buy from Toy R us and the ones that are used in Wild Wild Wet or Universal Studios rides. They serve the same purpose .. they are round and keep the user afloat inside. But which will last the rough usage in the long run. Yes .. there is a price difference.

Lastly, inflatable kayaks are labour intensive and hand laid. There is a high risk of manufacturing defects due to the process. Human are not robots and are not perfect. Do get one with local warranty and avoid importing in brands without local support. Unless you are prepare to write off your investments as shipping the kayaks back for replacement is going to be very costly, should you receive an inferior product
